Lemon Cake

Ingredients:

All purpose flour  -  1 1/2 cups (150 gms)
Sugar                   -  1 cup
Water                  - 3/4 cup
Lemon peel          -  1 table spoon
Lemon juice         -  3 table spoons
Vinegar                -  1 table spoon
Vanilla essance      -  1 tea spoon
Vegetable oil        -  5 table spoons
Baking salt            -  1 tea spoon
Soda-bi-carb        -  1/4 tea spoon

1.  Powder sugar in a mixer.  Add the flour, baking salt and soda bi carb to the powdered sugar and mix well and keep it aside.
2.  In a separate bowl take the lemon peel, lemon juice and mix well, add water to it and mix thoroughly.
3.  To this liquid add vinegar, vanilla essance and vegetable and mix well.
4.  Now to this add the sugar and other ingredients mixture and mix thoroughly with a whisk.
5.  It will foam slightly.  Keep whisking.
6.  Now grease a microwave bowl and dust it with all purpose flour.
7.  Pour the mixture into the bowl and microwave it for 6 - 7 mins.
8.  Allow it to cool.
9.  Its an excellent tea time snack.

Chocolate Cake

Ingredients:

Chocolate Cake
Maida                -  1 1/2 cup
Soda-bi-carb     -  1/4 spoon
Baking salt         -  1 tea spoon
Coco powder    -  1/4 cup
Milk powder      -  3/4 cup
White butter       -  3/4 cup
Sugar powder    -  3/4 cup
Orange powder  -  1 table spoon(Optional)
Vanilla essance   -  1/4 spoon
Milk                   - 1 - 1 1/2 cups

1.  Add together maida, baking salt and soda-bi-carb and sieve atleast 2 times.
2.  Add coco powder and milk powder to the maida mixture and mix well.
3.  In a bowl take sugar powder and butter and beat till they become frothy.
4.  Add the maida mixture to this sugar butter mixture and mix well.
5.  Add milk little by little and make it into a thick and slightly flowy dough.
6.  Remember that it should not be as flowy as dosa past or as tight as roti dough.
7.  Grease cake dish with butter and then dust it with maida.
8.  Add this cake batter to the dish and bake till done.
9.  Check by poking a knife into the cake and if the mixture does not stick to the knife its done.
10.In a basic model microwave it take some 6 - 8 mins.
11.Allow the cake to cool,  place a plate on the top of the cake dish and reverse and tap the bottom of the dish gently.
12.It comes out easily.  Serve with tea.

This can also made in pressure cooker.
1.  First spread 1 inch of sand inside the pressure cooker and heat for 5 mins.
2.  Place the cake dish inside the cooker.  Remember the dish should be of aluminium.
3.  Cover the pressure cooker with a heavy tawa.
4.  Cook for 25 - 30 mins.
5.  You can open the cooker in between and poke a knife and if the cake does not stick to the edges then the cake is done.
6.  Remove the dish from the cooker and allow it to cool.
7.  Reverse it in a plate and gently tap the bottom and your cake is ready.

Vanilla Blueberry Cake

Ingredients:

Maida (All time flour)-  1 cup
Powdered Sugar      -  1 cup
Milk                         -  1 cup
(Cooking oil+           -  1 cup
Ghee)
Baking Powder         -  1/2 tea spoon
Soda-Bi-Carb.         -  1/2 tea spoon
Blueberries               -  8 - 10 nos
Vanilla essence          -  4 drops

1.  Mix maida, powdered sugar, soda-bi-carb., and baking powder.
2.  Take them in a mixer and add the cooking oil, ghee and run the mixture for 2 - 3 mins.
3.  Now add milk and vanilla essence and run the mixer till the whole mixture becomes to a smooth paste.
4.  Cut the blueberries into small pieces, add it to the mixture for just 1 second.
5.  Grease the microwave proof bowl, pour the mixture and microwave for 6 - 7 mins.
6.  Vanilla blueberry cake ready.  Allow it to cool.  Turn it to a plate and serve.

Pineapple Juice

Ingredients:

Sugar                    -  750 gms
Lemon Salt           -  1 1/2 table spoons
Pineapple essence -  1 tea spoon
Yellow food colour-  1 tea spoon

1.  Take 1/2 litre of water in a thick bottomed vessel and add 750 gms of sugar.
2.  Allow it to boil, add the lemon salt to it.
3.  Just allow it to boil for 2 mins, remove from stove and allow it to cool to room temperature.
4.  Take 2 table spoons of the syrup in a small bowl, add the pineapple essence and yellow colour to it and mix thoroughly.
5.  Add the mixture to the syrup and mix well and store in air tight bottle.
6.  While making the juice take 4 table spoons of the syrup and add a glass full of chilled water and mix well.
7.  Serve yummy pineapple juice.

Mango Lassi

Ingredients:


Ripe Mango            -  1 cup
Fresh Curd             -  1 cup
Sugar                      -  2 table spoons
Salt                         -  1 pinch












1.  Take the mangoes in a mixer and make it into a paste.
2.  Add sugar, salt and curd to the mango paste and further blend the mixer.
3.  Add chilled water if necessary and pour it to the glass and serve.
4.  Its healthy and tasty.

Orange Cake

Ingredients:

Maida (All time flour)-  1 cup
Sugar                        -  1 cup
Milk                          -  1 cup
Honey                       -  1 table spoon
Cooking oil                -  1/2 cup
Ghee                         -  1/2 cup
Orange essence         -  1 tea spoon
Orange colour           -  1/4 tea spoon
Tutty fruity                 -  2 table spoons
Raisins                       -  2 table spoons
Baking salt                 -  1/2 tea spoon
Soda-bi-carb.            -  1/4 tea spoon

1.  Take the sugar in a mixer and make it into soft powder.
2.  Add maida, baking salt and soda-bi-carb.  and mix it for 1/2 min.
3.  Now add the cooking oil and ghee to the mixture and run the mixer again for another 1 min.
4.  Add milk, orange colour and orange flavour to the mixture and run the mixture for another 2 mins till the whole mixture become thick batter.
5.  Grease a microwave dish with oil and pour the cake mixture to it and add the tutty fruity and raisins to it and microwave the mixture for 6 - 7 mins.
6.  Poke the cake with a thin knife and if the batter does not stick to the knife then the cake it done.
7.  Allow it to cool and turn it upside down on a plate and gently pat the bottom of the cake dish and it will slide to the plate.
8.  Serve with tea or coffee.

Fanta


Ingredients:

Sugar                      -  750 gms
Lemon Salt             -  2 Tea Spoon
Orange Essence      -  2 Tea spoons (20 ml)
Orange colour         -  1/4 Tea spoon

1.  Take 500 ml of water in a thick bottomed vessel and add sugar to it.
2.  Also add the lemon salt to it and allow it to boil till the sugar melts and mixes well.
3.  Remove from stove and allow it to cool to room temperature.
4.  Add the orange essence and orange colour and store in air tight bottle.
5.  While making the juice take 1/4 glass of syrup and fill the glass with chilled water and mix well.
6.  Serve chilled with snacks.
